I hope you are because this recipe is a winner and a keeper. I’m really excited to tell you about this recipe. And I was craving cheesy breadsticks so this is how I ended up making this. I don’t think this recipe could get any simpler. You simply add the cauliflower to your food processor and pulse it a few times until the cauliflower resembles rice then microwave the cauliflower for 10 minutes. You then add ...

SKINNY BAKED CAULIFLOWER TOTS

Image
Skinny Baked Cauliflower TotsHave I told you about my cauliflower obsession? Seriously, I love cauliflower a lot. I also love tater tots – I can’t resist making a whole batch of them every weekend with a side of ketchup. Today I decided to marry the two. I ran out of potatoes and thought I’d try cauliflower instead.  After all, why not? It’s much healthier, plus I won’t feel guilty eating like a million of these little cauliflower tots. They are also baked so that’s another plus. Skinny Baked Cauliflower TotsThe mixture for this recipe is pretty simple and easy to put together. You’ll need 2 cups of cauliflower (obviously..), an egg, 1/2 cup of minced onions and 1/4 cup of bell pepper (I used red although, the bell peppers are completely optional), 1/4 cup of breadcrumbs and Parmesan cheese, cheese and salt + pepper to taste. Oh and I almost forgot, I also used 1/4 cup of minced cilantro but you can also use parsley instead. The only pressure point to the recipe is chopp...

Peters had been working out for years, but knew that he had to change his diet if he really wanted to see results. About a year and a half ago, he switched his eating habits and began posting photos of a week’s worth of lunches and dinners (two recipes cooked in 5 portions each) to his Instagram account. His tasty, affordable recipes began receiving attention from others trying to eat healthy, so he launched his website and a new Instagram account dedicated to meal prep last month. Drug Used for Preemie Eye Disease Tied to Problems

-- A drug used to treat an eye disease in premature infants may be linked to serious disabilities such as cerebral palsy and hearing loss, a new study suggests. The drug in question is Avastin (bevacizumab), a cancer drug that fights tumors by cutting off their blood supply. In the past few years, doctors have also been using it to treat retinopathy of prematurity, or ROP. Avastin isn't approved by the U.S. Food and Drug Administration specifically to treat ROP, but doctors still use the drug for what's known as an "off-label" indication. The current findings do not prove that Avastin is to blame, according to the researchers, led by Dr. Julie Morin of the Sainte-Justine University Hospital Center, in Montreal, Canada. They only show an association between the drug and serious complications in babies treated for ROP. ROP is a potentially blinding disease that mainly affects tiny preemies born before the 31st week of pregnancy, according to the U.S. National Ey...

meal prep

Image
It's Sunday afternoon. Your kitchen counter is covered with containers and baking dishes and you're loading each of them up with full meals, and there are many duplicates of the same meal prepared. This activity is known as "Meal Prep Sunday" in some circles. It simply involves preparing a bunch of meals at once on a single day, then freezing the extra meals for easy retrieval later, heating and eating at your leisure. For example, you might make four pans of lasagna at once, eat one for dinner, and freeze the other three. While you're at it, you might also make four pans of enchiladas and freeze all of those pans, and also prepare 10 bowls of rice and beans as well as 10 bowls of stew for future lunches and then pop all of those in the freezer. This strategy is both a great time and money saver. First of all, having a meal-prep day allows you to buy many ingredients in bulk. If you're preparing four lasagnas at once, for example, and there happens to...
